Vegetable Pizza

You can use just about any toppings for this pizza, this is just a good example of how to make a "Ratatouillie" type pie.

Preheat the oven to 425 degrees.
Mix all of the vegetables with the salt and pepper and the olive oil in a bowl.
On a clean and well dusted surface, roll out the pizza dough with a rolling pin until about 1/8″ thick.
Lightly brush a cookie sheet with olive oil.
Place the rolled out dough on the cookie sheet.
Brush the surface of the dough with olive oil.
Spread the vegetables out evenly on the dough, leaving about 3/4″ clear around the edges.
Place in the oven for 20 minutes.
Remove from the oven, brush the surface with a little more olive oil and spread cheese topping evenly over vegetables, again making sure to stay away from the edges of the pie.
Place back in the oven for 6 more minutes.
Remove, slice, and serve hot.
