Sweet & Spicy Pork with Apples

Tired of sweet potato casserole, and wondering what to do with all those sweet potatoes? If you have the time, look no further - this recipe is for you. The sweetness of the potatoes and apples combined with the spiciness of the chipotles makes for a tremendous winter feast.

Ingredients

    Ingredients for Adobo Sauce

    • 10 chipotle chiles dried, stemmed, slit lengthwise
    • 1/2 onion chopped
    • 5 tablespoons apple cider vinegar
    • 2 cloves garlic sliced
    • 1/4 cup ketchup
    • 1/4 teaspoon salt

    Ingredients for Pork Roast

    • non stick cooking spray
    • 2 chipotle chili peppers in adobo sauce chopped fine; see ingredients above
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper fresh ground
    • 1/2 teaspoon smoked paprika
    • 3 1/2 pounds pork roast
    • 3 sweet potatoes 1
    • 1 large onion chopped

    Directions

    Directions for Adobo Sauce with Chipotles

    1. Combine all of the ingredients in a sauce pan with 3 cups of water.
    2. Cover and cook on very low heat for 1 1/2 ~ 2 hours, until the chilis are soft and the sauce has been reduced to about 1 cup.
    3. This recipe will make much more than you need for the pork. However it will keep for several weeks in the refrigerator in a container with a tight-fitting lid.

    Directions for Roast

    1. Lightly coat slow cooker with non-stick cooking spray.
    2. In a bowl, combine chipotle chilis, salt, pepper, and paprika.
    3. Rub mixture on all sides of the pork roast.
    4. Place pork in the slow cooker.
    5. Surround roast with sweet potatoes.
    6. Layer onions on top of sweet potatoes.
    7. Core the apples. Puree two of them and slice the other two into 1/4 inch thick rings.
    8. pour the apple puree over the onions then cover all ingredients with apple rings.
    9. Sprinkle the apple rings with sugar and cinnamon.
    10. Cover, set the slow cooker for eight hours on low heat.
    11. When done, remove the roast and vegetables from the cooker.
    12. Cover the roast with aluminum foil and allow to rest for about ten minutes.
    13. Meanwhile, strain the remaining liquid into a saucepan and combine with flour.
    14. Cook over medium heat for about five minutes, whisking constantly, until thick and bubbly.
    15. Slice pork, serve with apple/potato mixture and the thickened gravy.
