
Not much is more fun than burgers and bocce, except perhaps burgers and croquet, but where is the alliteration in that? Jennifer I usually make these as sliders, and have three or four of them with different cheeses.

Mix all the beef, chopped onion, coriander, paprika, pepper, salt, egg, and beef stock together gently – careful though, as too much mixing will draw the fat out of the patties.
Make sure the mixture is cool, I usually let it rest a bit in the fridge after I mix it as it will warm up in your hands.
For sliders, make small patties, about the size of the cup of your hand.
Put the patties on a plate and press the back of spoon into the middle of each one. This will keep the slider from puffing up into a ball when you cook it.
Cook the patties on medium heat until it reaches the degree of doneness you prefer. Add the cheese to the patties 1 minute before they are done.
While the burgers are cooking, toast the rolls.
When the burgers and rolls are done, dress them up as you like with lettuce, tomato, onion, mayonnaise, mustard, and pickle. If you are creepy, you can even put ketchup on it. Yuck.
