
This is one of my favorite easy recipe. It is mostly derived from a recipe I got from our local CSA, Moore Farms and Friends. We always eat it with pasta, but it would probably also be great with rice.

Toss vegetables with Olive Oil, season with salt and pepper. Spread out onto baking sheet and roast in hot oven (400 degrees) for 30 minutes or so. Cook pasta according to directions, just make sure it is al dente, which usually means about 2~minutes shorter than what the package says.
About halfway through vegetable roasting time, take them out and mix around so that they will cook evenly. Return the vegetables to the oven and cook until they are just browned. Add garlic for the last 5 or 10 minutes to keep it from burning.
Drain the cooked pasta and toss with olive oil to keep it from sticking. Add the roasted vegetables, season with salt/pepper, add a little more olive oil if necessary to keep the pasta from being too dry. Mix together well, the vegetables break down a little bit and become the only sauce you need. Just before serving top with herbs and grated parmesan cheese.
