Directions

Sift the flour and salt together onto a clean, dry, smooth surface, making a mound.
With your fingers, create a well in the center to receive the water.
Mix the yeast into the water with a fork until it is smooth.
Slowly pour the water into the well and begin incorporating the flour with your fingers.
Initially this is going to to be incredibly messy and the flour is going to stick to your hands, counter, and everything else with which it comes in contact – but don’t worry – stick with it! It will clean itself up as you continue to knead the dough.
Continue to knead for about 10 minutes more, use the ball of your hand and fold the dough in on itself, pull and stretch the dough, and even throw it hard down onto the kneading surface, anything to thoroughly mix it and activate the yeast.
Roll the dough into a ball, cut an “X” into the top of the ball with a knife, then place it in a bowl and cover.
Put the bowl in a warm place for about three hours, or until the ball has about doubled in size.
