Everybody likes meatloaf, especially the next day. This recipe makes for a pretty moist version that falls apart pretty easily, but it is tasty. It also makes for some gooood meatballs.

Ingredients

  • 1 1/2 pounds ground beef
  • 2 cups bread, torn and crumbled
  • 1/2 cup milk
  • 1/4 cup fresh parsley, chopped
  • 3-4 cloves garlic, finely minced
  • 1 large onion, finely chopped
  • 1 whole poblano pepper, de-seeded & chopped
  • 1 whole egg
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1/4 cup parmesan cheese, grated

Ingredients for Sauce

  • 15 ounces can tomato sauce
  • 1/2 cup ketchup
  • 1/2 cup beef stock
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons brown sugar
  • 2 tablespoons dijon mustard
  • 2 tablespoons worcestershire sauce

Directions

  1. Preheat oven to 375 degrees.
  2. In a small bowl, whisk together all of the ingredients for the sauce.
  3. In a large bowl, mix together with your hands all of the ingredients for the loaf, plus 3/4 cups of the tomato sauce mixture. Reserve the rest of the sauce for basting.
  4. Form the meat mixture into a loaf and place in a lightly greased bread pan.
  5. bake in oven for 1 hour and 30 minutes, occasionally basting with remaining tomato sauce. Each time you baste the loaf, pour off excess fat from pan.
  6. Remove from pan, slice and serve. drizzle with more tomato sauce if desired.
