
Italian Sausage & Cabbage
Springtime is here and the cabbage is rolling faster than we know what to do with it. While there are lots of Irish and Eastern European recipes that call for cabbage and sausages, I thought why not Italian instead. If you are looking for something quick and easy this just may be your ticket.

Ingredients
- 1 head cabbage rough shredded
- 3-4 sweet potatoes cubed
- 1 bell pepper chopped
- 1 bunch green onions chopped
- 1 clove garlic chopped
- 4 tablespoons butter halved
- 2 pinches smoky paprika
- 2 pinches sugar
- 2 pinches parsley ground
- 2 pinches bay leaf ground
- 2 pinches cumin
- 2 pinches rosemary
- salt & pepper to taste
- 1 cup water
Directions
- Saute onions, green peppers, and garlic in 2 tablespoons of butter.
- In a large pot or Dutch oven, lightly brown Italian sausages in remaining butter. Do not cook them to completion.
- Remove sausages, place the sweet potatoes in the bottom of the pot with 1 cup of water.
- Layer the cabbage in on top and sprinkle with spices.
- Next layer in the onions, green peppers and garlic, and then top with the Italian sausages.
- Cover tightly and simmer until the potatoes are tender, about 20 minutes or so.
- Serve!
