
Duck Egg and Sausage Breakfast Pizza
OK, you don't HAVE to use duck eggs for this one, but they are sooo good for breakfast: very rich and hearty. Also, you could use spinach instead of chard, and maybe even bacon in lieu of sausage. Basically you could probably put just about any breakfast meat and vegetables on this thing and it would still be delish. I mean, once you have biscuits and gravy mixed together, how could you go wrong?!

Ingredients
Ingedients for the Crust- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter cold, cubed
- 1/2 cup buttermilk
Ingredients for the Gravy & Filling- 8 ounces breakfast sausage
- 2 tablespoons all-purpose flour
- 1 cup milk
- kosher salt to taste
- fresh ground pepper to taste
- 1 tablespoon extra-virgin olive oil
- 1/4 cup diced onion
- 1 cup chard de-stemmed & chopped
- 1 large Roma Tomato seeded & diced
- 2 duck eggs
Directions
- Preheat oven to 400 degrees.
- In a medium sized bowl, whisk together flour, baking powder, baking soda, and salt.
- cut the butter into the flour mixture until the butter is in 1/4″ cubes.
- Stir in the buttermilk until all ingredients are slightly moistened.
- With damp fingers to prevent sticking, pat the dough into a 10″ cast iron skillet, covering the bottom evenly.
- Bake in the oven for 10 minutes.
- Remove from oven and with the back of a large spoon, press a well into the dough, Leaving about 1/2″ of crust around the edges to contain the toppings.
- While the crust is baking, brown the sausage in a separate skillet over medium heat.
- Remove the sausage and drain on a paper towel, reserve 2 tablespoons of grease in the skillet.
- Whisk remaining 2 tablespoons of flour into the grease, then whisk in the milk.
- Cook gravy mixture over medium heat until it thickens and boils, whisking frequently to avoid it burning, about 5 minutes. Season with salt and pepper, whisk for a couple of more minutes.
- Pour gravy into the crust and spread it evenly along the bottom.
- Add oil to the skillet, cook the onions until they are soft and transparent, about 5 minutes.
- Stir in the chard, cook until it begins to wilt, about 2 minutes.
- Add sausage to the pizza on top of the gravy, then sprinkle with the onions and chard.
- Add tomatoes.
- Make two small indentations in the toppings, then crack one egg into each well.
- Place the cast iron skillet back in the oven and bake for about 15~20 minutes, until eggs are set.
- Serve and eat immediately.
