
Cabbage au Gratin
Tired of slaw and wondering what else you might do with that whole head of cabbage? This is a great way to make a warm side dish, and it is even hearty enough to serve as the main.

Ingredients
- 1 head of cabbage, shredded
- 1/4 cup all purpose flour
- 2 cups milk
- 2 whole lemon zest
- 2 tablespoons butter
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- 1/2 cup Parmesan cheese
Directions
- Preheat the oven to 350 degrees.
- Place the cabbage in a large steamer for about ten minutes.
- While the cabbage is steaming, melt the butter in a large pan.
- When the butter has melted mix in the flour and cook for a couple of minutes.
- Add the milk and stir frequently over low heat until the mixture thickens up a bit.
- Remove from heat and add the cabbage, Parmesan cheese, lemon zest, and salt and pepper to taste.
- Mix together well and pour the mixture into a casserole dish.
- Sprinkle the top with a little more cheese and place in the oven for about 35~40 minutes.
