Cabbage au Gratin

Tired of slaw and wondering what else you might do with that whole head of cabbage? This is a great way to make a warm side dish, and it is even hearty enough to serve as the main.

Ingredients

  • 1 head of cabbage, shredded
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 2 whole lemon zest
  • 2 tablespoons butter
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 1/2 cup Parmesan cheese

Directions

  1. Preheat the oven to 350 degrees.
  2. Place the cabbage in a large steamer for about ten minutes.
  3. While the cabbage is steaming, melt the butter in a large pan.
  4. When the butter has melted mix in the flour and cook for a couple of minutes.
  5. Add the milk and stir frequently over low heat until the mixture thickens up a bit.
  6. Remove from heat and add the cabbage, Parmesan cheese, lemon zest, and salt and pepper to taste.
  7. Mix together well and pour the mixture into a casserole dish.
  8. Sprinkle the top with a little more cheese and place in the oven for about 35~40 minutes.
