
Beef & Orange Stir Fry
Often I have a little bit of time to prep dinner, but no idea when JT will get home from work. Enter the stir fry - relatively quick to prepare, even faster to cook. Always great when you are on the go. This is a spin on a recipe from Cuisine at Home magazine.

Ingredients
Marinade Ingredients- 1/4 cup orange juice
- 1/4 cup beef broth low sodium
- 2 tablespoons orange marmalade
- 2 tablespoons worcestershire sauce
- 1 tablespoon molasses
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 12 ounces beef tenderloin sliced into 1/2
Stir Fry Ingredients- 1 tablespoon canola oil
- 1 tablespoon garlic minced
- 1/2 teaspoon red pepper flakes
- 1 head brocoli chopped
- 1/2 red onion sliced
- 20 shiitaki mushrooms sliced
- 1 red bell pepper sliced
- 2 mandarine oranges segmented
- greens lettuce, spinach, etc.
Directions
- Whisk together orange juice, broth, marmalade, worcestershire sauce, molasses, honey, vinegar and sesame oil.
- Whisk in corn starch.
- Add the beef, tossing to coat thoroughly with marinade. Set aside.
- Coat wok with canola oil and heat over medium high heat.
- Add half the beef to the wok, stir fry until brown, 2-3 minutes and set aside. Brown remaining beef and set aside.
- Set marinade aside.
- Remove wok from heat ans re-coat with oil. – return to heat.
- Add garlic and peeper flakes to wok and stir fry for thirty seconds.
- Add the broccoli and onions, stir fry for three minutes.
- Add mushrooms and bell peppers, stir fry two more minutes.
- Return beef and marinade to wok, heat until the marinade thickens and boils.
- Add oranges, stir fry for one minute.
- Divide greens onto plates, add rice, then top with stir fry.
